Gluten-Free Peanut Butter and Jelly Sandwiches


Are you feeling annoyed? Confused? Maybe even ripped off? Because the picture you see doesn't appear to match the title? DON'T RUN AWAY. THIS POST IS NOT CLICK BAIT. Instead, I explain myself in this blog post. It's okay, though, I kept it brief.

By now you've probably already figured out that I used cookies in place of the bread to make these gluten-free sandwiches. True. You may even think you have an idea of what this "sandwich" is going to taste like, and that it will never be the same as a REAL peanut butter and jelly sandwich. You're right, again! It's not exactly like a regular pb&j, cause *duh* there's no bread, but the flavors and texture that these specific cookies bring to the party, makes it is not a bad second!

I came up with this idea while feasting on the remaining batch of the cookies I made for the 6-ingredient peanut butter cookie post. Because they have a touch of softness and pliability in the center, I immediately thought, "what if I added jelly and made a sandwich?"

Unfortunately by then, there were only two cookies left, the one I was chewing and the last cookie on the plate. So, I made a note-to-self to make another batch of cookies, so that I could try out this recipe idea.


Well ... here it is ...



The Recipe 









DIRECTIONS

Assemble the "Sandwich"

  1. After cookies have cooled for at least 5mins, take one cookie and turn it upside down on a plate.
  2. Spread 1 tbsp of the fruit jelly on the bottom of that cookie. 
  3. Now, find another cookie that came out about the same size of the one you just put jelly on.
  4. Place it on top of the first one so that the two bottoms are touching the jelly. Press lightly.
  5. Repeat steps 1-4 until you've made 4 sandwiches. 
  6. Now, serve and/or eat.

Tip: Be sure that the jelly you use hasn't been cross-contaminated with hard to see bread crumbs, by friends or family. Like mine happened to be when I made these. UGH!
